Palo Cortado is niet het type sherryvat dat je op elke whiskyplank tegenkomt. Het zit een beetje in dat mooie gebied tussen de droge, nootachtige kant van Amontillado en de rijkere, donkerdere kant van Oloroso. Niet zo stroperig zoet als PX, niet zo klassiek zwaar als een grote Oloroso sherry bomb, maar eleganter, iets droger en vol karakter. En juist daarom past het zo mooi bij The GlenAllachie.<br><br>Deze Speyside distilleerderij heeft de laatste jaren echt een eigen identiteit opgebouwd rondom hout, smaak en transparantie. Sinds Billy Walker en zijn team aan het roer staan, is GlenAllachie zo\u2019n distilleerderij geworden waar de keuze van het vat echt belangrijk voelt. Je koopt niet zomaar \u201cnog een Speyside whisky\u201d. Dat zijn voor mij al drie mooie vinkjes voordat de kurk er \u00fcberhaupt af gaat.<br><br><strong>Nose<\/strong>:<br>Warm en uitnodigend. Rijpe pruimen, kaneel, zachte eik en een vleugje mocha. Daarna komen honing, rozijnen, sinaasappelschil en geroosterde noten rustig naar voren. De sherry-invloed is duidelijk aanwezig, maar trapt de deur niet open. Hij komt binnen met een zelfverzekerde glimlach.<br><br><strong>Palate<\/strong>:<br>Rijk, sticky, kruidig en mooi in balans. Donker fruit, kersen, chocolade, honingraat en een beetje warme gember. De Palo Cortado finish geeft er een droge, nootachtige rand aan, waardoor hij niet te zoet wordt. En dat is precies wat ik hier zo lekker vind. Hij heeft diepte, maar ook grip.<br><br><strong>Finish<\/strong>:<br>Middellang, verwarmend, licht droog en kruidig. Kaneel, pure chocolade, geroosterde noten en een klein beetje eik blijven mooi hangen. Niet eindeloos lang, maar wel heel tevredenstellend.<br><br>Voor mij is dit geen whisky die hard hoeft te schreeuwen. Dit is meer een dram van balans en detail. Zo eentje waar je even bij blijft zitten, omdat elke slok net weer iets extra\u2019s laat zien.
