Dit is mijn eerste echte kennismaking met de Dingle Distillery en ik snap meteen waarom Ierse whiskey op dit moment zo levendig voelt. Dingle Distillery ligt helemaal aan de westkust van Ierland, in County Kerry, vlak bij de Atlantische Oceaan. De distilleerderij werd opgericht in 2012 en is \u00e9\u00e9n van de namen die kleinschalige Ierse whiskey weer mooi in de schijnwerpers heeft gezet. En wat ik hier vooral mooi vind, is de transparantie. Geen toegevoegde kleur. Niet koud gefilterd. Drie keer gedistilleerd. Gebotteld op 46,5% ABV. Dat vertelt al veel voordat de whiskey \u00fcberhaupt in je glas zit. Maar dan is er ook nog de Wren Boy. Die koperen figuur met stro op de doos verwijst naar een oude traditie uit Dingle. Muziek, folklore, gemeenschap en feest komen daarin samen. Dat geeft deze fles iets extra\u2019s. Mijn proefnotities<\/strong>
Geur<\/strong>:
Frisse citrus met limoen en mandarijn, wat munt, vanille en zachte karamel. Na even in het glas komen appelgebak, zachte specerijen en een klein randje pure chocolade naar voren.
Smaak<\/strong>:
Romig, levendig en mooi in balans. Gekarameliseerde appel, honing, rozijnen, sinaasappelschil, fruitcake en warme kruiden. De Bourbonvaten houden het fris, terwijl Oloroso en PX zorgen voor donkerder fruit, zoetheid en diepte.
Afdronk<\/strong>:
Middellang en verwarmend, met zachte eik, honing, citrusmout, een beetje peper en gedroogd fruit dat langzaam wegzakt.
Dit is precies waarom Ierse whiskey op dit moment zo interessant voelt. Niet alleen zacht. Niet alleen makkelijk drinkbaar. Maar met karakter, openheid en een duidelijke link naar de plek waar het vandaan komt.
