Serieus vertrouwen. En waarschijnlijk een warehouse waar de meeste whiskyliefhebbers stil van worden. Want wie kijkt er naar een rij vaten en denkt: \u201cLaten we Bowmore en Bruichladdich blenden\u2026 en het gewoon op het label zetten alsof het de normaalste zaak van de wereld is.\u201d Dat is precies wat North Star Spirits doet. Geen verstoppen. Geen vage \u201cIslay malt\u201d verhalen. Iain Croucher selecteert niet alleen vaten\u2026 hij legt gewoon alles open op tafel. En dat zie je niet vaak. Geen zachte randjes. Ik opende de fles gisteravond\u2026 \u00e9\u00e9n dram, daarna nog \u00e9\u00e9n (puur voor onderzoek natuurlijk), weer dichtgemaakt\u2026 en vanochtend opnieuw geproefd. Andere whisky. Zelfde fles. Dan weet je dat het interessant wordt.<\/p>\n\n\n\n<p><strong>Neus<\/strong>:<br>Zachte kustrook, zeezout en in het begin dat lichte medicinale\/pleisterachtige\u2026 en daarna draait het. Citrus, appel, karamel, boterkoek en honing komen langzaam naar voren. Vanochtend? Zoeter. Schonere lijnen. Het medicinale bijna weg.<\/p>\n\n\n\n<p><strong>Smaak<\/strong>:<br>As van een kampvuur, teer en klassieke Islay rook\u2026 maar mooi in balans met romige toffee, melkchocolade en een lichte peperkick.<\/p>\n\n\n\n<p><strong>Finish<\/strong>:<br>Medium tot lang. Blijvende rook, zoute drop\u2026 en een droge, licht fenolische rand. Bij de tweede tasting meer zout, gember en een warme kruidige gloed.<br><br>En eerlijk\u2026 Ik hou ervan dat ze dit gewoon doen. Dit is zo\u2019n whisky waar je niet doorheen jaagt. Je gaat er een beetje mee spelen. Misschien is dit wel een two-step whisky: \u00e9\u00e9n dram direct na openen\u2026 en \u00e9\u00e9n nadat tijd er iets mee heeft gedaan. Want deze blijft niet stil in je glas\u2026 die ontwikkelt zich.
